We prepare a quick and simple French soup.🧷
The main ingredients of this soup are fish or seafood, and its name comes from chaudiere - "saucepan", dishes in which French immigrants in the southern states of America cooked thick soups for themselves.
Due to its density, this soup is an ideal dish for cold winters. Sweet corn and potatoes make it satisfying, nutmeg gives flavor, and red pepper and shrimp - a piquant taste.
You will need:
1 liter of fish broth
2 tablespoons olive oil
1 large onion (finely chopped)
2 medium red sweet peppers without seeds (thinly sliced)
350 gr. potatoes (diced)
350 gr. sweet corn
1 bay leaf
0.5 teaspoon dried marjoram or oregano
Grated nutmeg (on the tip of a knife)
425 ml. milk
Ground black pepper
450 gr. raw shrimp without shell
150 ml. low-fat cream
salt to taste.
1. Heat the olive oil in a large saucepan and bring the onion in it until soft, without browning it.
2. Add pepper, potatoes, sweet corn, bay leaf, marjoram or oregano and nutmeg. Pour in water (or fish broth) and bring to a boil. Reduce the heat to moderate, cover with a lid and cook until the potatoes are ready.
3. Pour in the milk and pepper. Bring the soup to a boil again and put the shrimp in it. Cook for 3-5 minutes over moderate heat.
4. Remove the bay leaf and pour in the cream. Warm up for 2-3 minutes, making sure that the soup does not boil.
